Remember this tradtional way of baking Christmas sweet breads? Here’s how!

Pumpkin Bread in a can

3 cups flour

1 tsp. cinnamon

1 tsp. allspice

1 tsp. cloves

1 tsp. nutmeg

1 tsp. baking powder

1 cup vegetable oil

3 cups sugar

3 eggs, beaten

21/2 cups canned pumpkin

1 cup chopped toasted pecans

 

Preheat oven to 350 degrees. Sift dry ingredients together. Mix oil, sugar,
eggs, and vanilla, then add to dry mixture. Add pumpkin and pecans. Grease WELL
three 1-pound coffee cans or 6-8 soup cans and coat evenly with flour. Pour
bread batter into cans, filling about half way, and place upright on a baking
sheet. Bake for 1 hour. Cool bread on wire rack.
