Rhubarb Cream Pie

Administrative Assistant Ann Diehl surprised us this morning with this deliciousness, a rhubarb cream pie adapted from an old peach pie recipe her mom makes.  We’re pretty sure we’ll need a peach one too, just to make sure which is best.  Check out the recipe below!

Ann-Rhubarb Pie

1-unbaked pie crust
4c. chopped rhubarb
1 ½ c. sugar
5 T. flour
1 c. heavy whipping cream

Mix rhubarb, sugar, flour & heavy whipping cream together and pour in pie shell.
Bake at 350 for 45-50 minutes or until set.
