This is the recipe for my truffles. They are A-MA-ZING!!!
7 oz. good quality semi-sweet chocolate chips
1 oz of cocoa powder
2/3 cup of heavy whipping cream.
Bring the cream to a boil over medium high heat
Pour the chips into a metal or glass bowl
Now pour the hot cream into the chocolate
Stir slowly from the inside out to melt the chips. Do not whip the chocolate as that incorporates air. We want dense truffles.
When smooth, put in freezer to cool (about 15-20 minute)
Now form into small balls and roll in the cocoa powder.
Store in a cool place.
